Healthy Oatmeal Muffins Your Kids Will Love
Mornings can be hectic and maybe we don't have time to make a big breakfast or green juice every morning - and let's face it, sugary cereal, bagels, and the like are possibly the worst choice for your or your kids' first meal of the day.
What you feed your body first thing in the morning is super important. <strong>It sets you up to have a healthy eating day, or a really junky one. By eating a high-glycemic, sugary breakfast, you are setting your body up to <strong>crave sugar all day long</strong>. Your blood sugar will rise and fall and unless you break that cycle by making sure the <strong>next thing you eat or drink is low-glycemic and healthy, you will fall victim of sugar blues, junk food moods, and ravenous cravings for things you don't really want to eat.

I took a classic oatmeal muffin recipe and made it healthy. Give 'em a try and let comment below to let me know what you think!
Healthy Oatmeal Muffins*use organic ingredients as much as possible
1 cup rolled oats
1 cup unsweetened almond or coconut milk
1 cup sprouted grain flour (or 1/2 cup almond flour, 1/2 cup sprouted grain flour)
1/3 cup coconut palm sugar (low-glycemic)
3 tsp baking powder
1/2 teaspoon celtic sea salt
1 well beaten egg
1/4 cup melted coconut oil
1. Pre-heat oven to 425 degrees F.
2. Combine the oats and milk - let stand.
3. In a separate bowl, combine flour, sugar, baking powder, saltAdd egg and oil to the oatmeal mixture, then add all at once to the dry ingredients.
4. Stir just to moisten.
5. Fill greased muffin pan* 2/3 full. (*use coconut oil for your grease, and preferred to use a cast iron or stainless steel muffin pan - non-stick pans release chemicals into your food. If all you have is non-stick, use muffin cups/liners in your pan)
Bake at 425 for 20-25 minutes. Makes 1 dozen muffins.
